iTunes, top left, File>Transfer Purchases. Download your user guide at Apple.com/support.

Apple made it so that you can't transfer stuff off your iPod, just to it. You can get some 3rd party software to do it, but they usually aren't free, or the free ones only let you transfer like 100 songs.
